Does anyone have the built dimensions of this model?

Yeah. Roughly 10" x 7" x 15" tall.
I just measured the assembled/painted one I am about to try to get rid of. Those measurements are SLIGHTLY rounded up at the widest/tallest points.

Great, thanks!

Any input on the modularity/removability of some of the parts?

I read something about leaving the observatory tower as a separate piece, having sawn off the "dangling" bricks.

I received it pro-painted. It was already assembled fully.
It MIGHT be that it can be put together in such a way as to be modular for storage or to use as separate pieces But there appears to be ZERO interior detail, unlike the Witchfate Tor. So, if you want it separate for those purposes... not happening.
